Pork Cheeks Braised with Chickpeas and Tomato

INGREDIENTS

  • 1kg of pork cheeks

  • 100g onion

  • 300g of boiled chickpeas

  • 300g of fine Mutti tomato pulp

  • 2dl of vegetable broth

  • 1 glass of white wine

  • 1 teaspoon of turmeric

  • Oil and butter

  • Salt


METHOD

  1. Finely chop the onion and let it braise with 50g. of butter and 2 tablespoons of oil until it is very soft

  2. Degrease the cheeks by removing the external fat filaments with the help of a sharp knife

  3. Brown them in a pan with a knob of butter and 1 tablespoon of oil

  4. Wet them with white wine, let them evaporate

  5. Add the hot broth, the stewed onion tomato pulp, turmeric and chickpeas

  6. Cook over low heat for about 1 hour and half or until skewering them with a toothpick will be soft

  7. Season with salt to your liking
